Apple Cupcakes

I have a thing for apples. One of my favorite fall scents is the fresh apple scent (not the cider one, though I like that, too) I think Yankee Candle calls it Macintosh.

So since last year I shared pumpkin goodness with you, this time I thought I'd go for apple. I first made these when I was by myself one Thanksgiving. What was I thinking? Too much food for one person, I was forced to share them. :) This is tres facile, I think you will enjoy!

Please Gather
1 package of spice cake mix or carrot cake mix
2 cups of chopped peeled tart apples
1 cup of finely chopped pecans
The ingredients your cake mix calls for (probably water, eggs, vegetable oil)
Some cream cheese frosting. You can make this on your own or do the sensible thing and get it premade (kidding!)

Action Steps
Prepare your cake according to the directions on the package and mix in the apples
Prepare your muffin tray with paper linings or make sure it's properly greased.
Bake your cupcakes for 20 minutes at 350.
Let them cool for 10 minutes.
Slather the creamcheese frosting on and sprinkle the pecans on the top.

And you're done. Was that not really the easiest thing ever??

Basically just making cupcakes with apples. You can also add in a little bit of frozen apple cider, for super flavorful cupcakes.
